I looked into this some time ago. Here’s what I think. You need to be fully vaccinated. The definition of what that means is a little complicated. It can mean double vaccinated but that is only valid for 270 days after the second vaccination (and not before 2-4 weeks after vaccination). If you have also had a booster dose then the validity period is unlimited. www.government.nl/topics/coronavirus-covid-19/visiting-the-netherlands-from-abroad/requirements-for-proof-of-vaccinationThe gov.uk Netherlands travel page says NHS certificates are ok for proof of vaccination. There’s a recommendation about testing but that is not enforced and I doubt many people actually follow this, I won’t be. I’d recommend you read the sites for yourself, I’m not an expert in this! When I checked some weeks ago there were exceptions from fully vaccinated but only for specific reasons. And I doubt football was on that list.

Does anyone know for sure if a printed NHS certificate is required or can we show it via the NHS app?
Edit, I was thinking of the 'official' printed cert that you used to be able to order but the NHS app now allows you to print your own so i'll do that as well, just in case

Is a vaccine Declaration COVID-19 form require to be completed as well as NHS Covid Pass if you are fully vaccinated? From welrus 's link above, I'd say yes Proof of vaccination status
Dutch authorities will accept the UK’s proof of COVID-19 vaccination record and proof of COVID-19 vaccination issued in the Crown Dependencies, in paper or digital form. Your final vaccine dose must have been administered at least 14 days prior to travel, and 28 days in the case of the Janssen (Johnson & Johnson) vaccine. Proof of vaccination is valid for 270 days from the receipt of days after the final dose of your primary vaccination. 270 days after the final dose of the primary vaccination, you need a booster to be considered fully vaccinated. Currently there is no end date for the validity of the booster. An NHS appointment card from vaccination centres does not qualify as proof of vaccination. Travellers must also present a vaccine declaration form.

Managed to get rerouted to Cardiff on KLM (costing Easyjet £550!) -anyone here with space in a taxi or car travelling from Cardiff Airport towards the City Centre/Roath let me know and I'll chip in for petrol/taxi fare

You will need to persevere though. EasyJet may arbitrarily reject your claim but they are members of an arbitration service which you will then need to put a claim in. Hassle I’m afraid.
